Today we are featuring Shawn's favorite cheese. He absolutely loves the very aged cheddar. It is very sharp cheese but age mellows it out and creates a buttery texture. The cheese also gets calcium crystals which are crunchy and can easily be seen on the cheese. It is a cheese that you just eat with nothing else to enjoy all the elements of it.

Do you have one cheese that is your absolute favorite go-to? Today we are doing mine (Teddie Jo) and we will focus on the guys in the next few days. The white 2 year cheddar is my absolute favorite! Why? It's sharp, but not too sharp. It is a bit more dry, which helps with no reaction as far as my milk allergy goes. It is amazing just to eat in slices, with crackers, with pepperoni, with about any jam at all and literally with any kind of wine, riesling or moscato you like! It's the one size fits all cheese in my opinion! Try it out if you haven't, it's amazing!
