This is part of it.

When we get beef back from the processor, our kitchen turns into Dorsett Beef headquarters for a little while. šŸ˜‚ Boxes everywhere, beef everywhere, and usually a few extra sets of hands helping us sort and pack.

This business really is a family effort—from raising the cattle to packing the boxes that eventually make their way into your freezer.

It’s not the prettiest part of what we do, but it’s one of our favorites because this is where all that work finally becomes something we get to share with another family. ā¤ļø

One of the fun parts of buying beef directly from a farmer is getting cuts you may not normally grab at the grocery store.

Some are made for the grill. Some are better low and slow. And some of those less familiar cuts can end up becoming your favorites.

So if you buy beef from us and aren’t sure what to do with something—ask us!

There’s a lot that happens before beef ever reaches the freezer. šŸ„

It’s checking cattle when it’s hot. Fixing fence when you’d rather be home. Feeding, hauling hay, watching the weather and making sure everyone has what they need.

Most of it isn’t very exciting—and a lot of it never makes it onto social media.

But it’s all part of raising cattle well.

Buying beef and other meats closer to home may be easier than you think.

Ashli asked East Texans yesterday where they buy locally raised meat, and the recommendations came quickly, with several options in Marshall, Hallsville, Waskom, and Jefferson. More than that, over 5,000 people looked at the post, which tells us you want to know too.

Whether you’re looking to buy directly from a rancher, fill the freezer with beef, or find a good old fashioned butcher counter, there are plenty of choices, and we’ve compiled many.

Where to Buy Local Meat:

* Hynson Springs M Ranch, Marshall: A family owned ranch near Marshall offering direct-to-consumer, pasture raised, 100% grass fed and grass finished beef.

* Hughes Ranch, Waskom: Local residents recommended Hughes Ranch for ranch raised beef, available through Waskom Hardware on Texas Street. Options include ground beef, steaks, brisket and roasts, along with larger quantities for families looking to stock the freezer.

* Seven Spurs Ranch, Hallsville: This was one of the names that came up multiple times when we asked for recommendations for locally raised beef. Contact the ranch directly for current availability and purchasing options.

* Shady Grove Ranch, Jefferson: Shady Grove offers more than beef. The East Texas farm sells grass fed beef along with pasture raised pork, chicken, turkey and eggs, with farm store shopping and pickup options.

* Rise and Shine Hills, Hallsville: Another recommendation from our readers, with farm raised foods including beef and fresh eggs. Local customers also pointed to Rise and Shine for lamb and chicken. Dorsett Cattle Co. out of Gilmer is a frequent vendor.

* Crooked Creek Akaushi, Jefferson: Offers locally raised Akaushi Wagyu beef, giving East Texans another option for buying quality beef close to home. The ranch raises its cattle right here in Northeast Texas and offers a selection of premium cuts available for purchase directly from the ranch.

* Bar S Cattle & Beef, Hallsville: Offers homegrown, grass fed and grain finished beef. In addition to beef, the operation also offers hay, show cattle, Angus bulls and commercial cattle.

* Honey Do Acres, Marshall - Pastured Pork: If pork is what you’re after, this was another reader recommendation, particularly for bacon and pork chops.

* Bear Creek Smokehouse Inc, Marshall: Bear Creek deserves a little more explanation because this longtime East Texas business offers considerably more than barbecue. The General Store on Highway 154 serves as the retail outlet for Bear Creek’s smoked meats. Current offerings include smoked turkeys, spiral-sliced and boneless hams, peppered pork tenderloin, hickory-smoked and peppered bacon, Polish sausage, summer sausage, jalapeƱo-and-cheddar summer sausage and a variety of meat samplers and gift packages. They also carry jarred goods, soup and chili mixes and other specialty foods.

* Cedar & Sage Homestead, Marshall! Offers fresh pork, farm fresh vegetables, chickens and free range eggs.

* Top Homestead General Store, Longview:
Located at 9999 Hwy 259 North, Top Homestead General Store offers locally raised proteins along with farmers market goods, gardening supplies, local pottery, vintage and antique items, and plenty of old-fashioned general store charm.

* Shady Grove Ranch, Jefferson offers pasture raised, grass fed beef, pork, chicken, turkey and farm-fresh eggs.

* Triple Skull Ranch, Marshall: Offers 100% grass raised beef with no added hormones. They also offer free delivery to Caddo Packing in Marshall when you purchase beef from the ranch.

* Caddo Packing Co, Marshall: Don’t overlook one of Marshall’s longtime meat market options. Caddo Packing is located at 609 S. Washington Avenue and operates as a traditional butcher shop and meat processor. It’s a great stop for fresh meats, steaks, sausage and custom cuts, along with cheeses and other items from the meat counter. The business also provides custom meat processing.

*Don’t forget our Marshall & Harleton Farmers Markets for fresh produce and other locally produced goodies.

The response to Ashli’s original question made one thing pretty clear: you don’t necessarily have to head to a big grocery store to put good meat, produce, eggs and cheese on the table. There are ranchers, farmers, smokehouses and old fashioned meat markets throughout our part of East Texas. When you buy from them, you’re also keeping more of your grocery dollars right here at home.

Our cattle spend most of their lives grazing pasture. As they get closer to harvest, we finish them with grain.

We choose to finish this way because we love the flavor, tenderness and marbling it produces.

It’s the way we’ve chosen to raise beef for our own family—and the beef we’re proud to offer yours.

We checked in with one of our customers recently to see how they were enjoying their beef, and this was their response:

That’s about as good as it gets for us.

We put a lot of time and work into raising cattle and producing beef we’re proud to feed our own family. Hearing that another family is enjoying it this much is exactly why we do what we do.
