The season continues at the research station where production moves into the greenhouse. Komatsuna can grow indoors for winter nutrition. Negi holds in the field for weeks, awaiting harvest. Kabu (turnips) get even sweeter in the cold weather.

Salmon Carpaccio with Shiraga Negi.

Shiraga Negi (白髪ネギ) directly translates to “white hair negi” and is a common yet unique way to slice negi, and is often used as refreshing garnish on dishes like ramen.

The negi is sliced thin and soaked in ice water for 10 minutes to remove any raw harshness.

In this dish, olive oil is added for a unique twist on the classic preparation. Let us know if you try making Shiraga Negi at home.

Taste testing! Different varieties of the same crop may have very different culinary applications.

Within kabocha, there are two different types: the traditional “wet” type, and the newer “dry” or fluffy type. The research team taste tested our varieties in various ways, to see their unique qualities across steaming, tempura, simmering, baking, and more.

They conducted a survey to see which type was preferred, and the answer of course was both! Depending on the application, different varieties can be preferred.

Our variety Zuccuri is a chestnut-textured “dry” type, which is best for tempura or other frying applications, grilling, and certain types of baking.

New Year’s in Japan is rich with tradition, starting with a bowl of soba on New Year’s Eve. The long noodles symbolize a wish for a long life, and eating them is a way to let go of the past year’s hardships.

The winter solstice, also known as 冬至・Touji (winter division), represents the changing of the seasons. It is the shortest day of the year, meaning that the days will start getting longer from today!

In Japan, this day is celebrated by enjoying kabocha recipes and yuzu baths.
