So I get asked a lot about GMO, gluten, and many of the confusing buzzwords. I consider all of them to be marketing ploys to deceive and confuse.
That’s actually why I don’t put “non-GMO” on any of my labels or signs. I refuse to play the buzzword game. Real quality doesn’t need fancy marketing terms to sell itself.
GMO is genetically modified organisms — when a geneticist modifies or removes a piece of DNA in a lab. The main meat chicken most people eat today is the Cornish Cross. This is not a GMO. It is a hybrid breed created through traditional selective breeding.
Back in the 1940s and 1950s, the A&P Supermarket chain sponsored the “Chicken of Tomorrow” contests to develop a faster-growing, meatier bird that would make chicken affordable for regular families. The winning genetics eventually led to the modern Cornish Cross — a complex multi-generational hybrid that started with Cornish chickens (known for broad, meaty breasts) and White Plymouth Rock chickens (known for fast growth), and has been refined over decades.
Important note: Even the industrial chicken you buy at the grocery store is not GMO. However, the way most of it is raised and processed is very different from true pasture-raised birds. Conventional birds spend their entire lives in crowded, high-production barns with very limited space to move. After processing, they often go through a chlorinated chemical bath for pathogen reduction (a practice that has been banned in Europe for years) and are sometimes injected with saline solutions to add moisture and weight.
At T&C Farms, our pasture-raised birds are naturally plump and juicy due to healthier practices, better diet, and real exercise on pasture. Their welfare and living conditions are far superior to industrial production.
