I went from an occasional baker to one who started baking bread at home in earnest during the long cold winter of 2014. I baked more than I could use and gave the remaining loaves away to friends and family. As the year progressed so did my bread-making skills. I began helping my friend Bob Biancavilla bake during the pre-dawn hours at his Duck Island Bread Company, now located

in Huntington, NY. I added authentic Bavarian-Style Soft Pretzels ("Laugenbrezeln") to to my baking repetoire in the Fall of 2014. I chose the name "Peggy's Cove Bread Company" in memory of my mother, Peggy O'Rourke, who died in 2009 and because I live in Glen Cove, NY. My folks visited and enjoyed their time in Peggy's Cove, Nova Scotia, whose iconic lighthouse is the inspiration for Peggy's Cove Bread Company's logo. Peggy's Cove Artisan White Bread is entirely made by hand using only King Arthur flour, water, salt and yeast. The crisp golden crust, sprinkled with pretzel salt, surrounds a slightly golden open crumb. It is made using a pre-ferment known in French as "polish" The 14-hour highly-fermented 100% hydration polish produces a rich bread flavor and gives the loaves a three-day shelf life. This bread makes great toast and tastes fantastic with Irish butter or dipped in high-quality extra-virgin olive oil. The loaves (or slices that you can pop in the toaster) freeze well in Zip-loc freezer bags of double-wrapped in plastic wrap for up to several weeks. Peggy's Cove Bavarian-Style Soft Pretzels are made with an all-natural dough that contains only King Arthur flour, water, unsalted butter, yeast, salt and diastatic malt powder (to feed the yeast). Each pretzel, no matter the size or shape, is hand-rolled and chilled before being dipped in a 4% solution of food-grade lye, just as in Germany, for an authentic pretzel taste. It is then sprinkled with pretzel salt before heading to a very-hot oven that neutralizes the lye and turns the outside of the pretzel a golden brown color. While best eaten the day they are baked, these pretzels also freeze well wrapped tightly twice in plastic wrap and taste great re-heated in a 250 degree oven. I hope you enjoy my bread and pretzels almost as much as I enjoy making them.

Tomorrow - Friday February 16th - is Peggy's Cove Pretzel Night at Garvies Point Brewery in Glen Cove. From 5-8pm Peggy's Cove Bread Co. principal baker Tim O'Rourke will serve four warm, soft, locally handmade cocktail-size Bavarian-style pretzel knots, including DIY cinnamon-sugar & melted butter knots, "everything" knots, Garvies Point Prybil Pale Ale beer-cheese sauce and honey chipotle mustard, paired with a four-flight of carefully selected Garvies Point beers and ales. $10 + tax per person. Last week I was invited as spouse to a cocktail party at one of Melissa's Manhattan DA colleague's apartment on the Upper West Side. Melissa brings loaves of my bread to him at work and he is a fan. He once even wrote a haiku about it. I brought another loaf and few dozen pretzel knots to the party. The pretzels were a hit and inspired him to pen a very funny, very short play about the two of us. Enjoy.
