A favorite herb I've been growing since year 1 is Anise Hyssop.
Anise Hyssop (agastache foeniculum) is a perennial member of the mint family native to much of North America. It grows up to 5ft tall and is quite drought tolerant. As you can see in the picture, it is a favorite of bumblebees. Hummingbirds, butterflies, honey bees, and night moths also enjoy the flowers.
Anise Hyssop can be used in salads, jelly, cookies, cakes, ice cream, and so much more. A simple syrup made with the herb is great with rum or gin. Anise Hyssop has a sweet,licorice flavor. Of course it is also a delicious tea herb. The strong scented flowers can also be used in potpourri.
Anise Hyssop is a great medicinal herb. Its harder to find it's uses since most come from the indigenous people of North America. The Cree, Cheyenne, and Ojibwe used it for respiratory ailments, fevers, digestive support, and externally for burns. It was used in sweat lodge ceremonies to reduce fever through sweating. Today's medicine is studying it's antimicrobial, antioxidant, expectorant, and carminative actions.
