Taco Tuesday just got a walnut upgrade. 🌮🌰
And before anyone says it… yes, we know replacing taco meat with walnuts sounds a little suspicious at first.
But trust us on this one….It’s a good one! 

When soaked, seasoned, and seared the right way, our walnuts turn smoky, rich, crumbly, and packed with flavor. The texture surprises people every single time. It’s one of those recipes that makes you stop halfway through dinner and go, “Wait… this is walnuts?”
This is the kind of recipe we love because it shows just how versatile walnuts really are. They’re not just for baking or salads. They can completely transform a meal.

SMOKY WALNUT TACO MEAT
• 2 cups walnuts, soaked 30 min in hot water
• 1/2 cup sun-dried tomatoes, rehydrated
• 1 chipotle pepper in adobo + 1 tbsp sauce
• 2 garlic cloves
• Cumin
• Chili powder
• Smoked paprika
• Salt
• 1 tbsp soy sauce
• 1 tbsp avocado oil
• Juice of 1 lime
Do not forget about the most important step:
Soak the walnuts in boiling water for 30 minutes first.
That’s what softens them, removes bitterness, and creates that tender, almost chorizo-like texture instead of a dry crumble.
Drain and pat dry, then pulse everything together in a food processor until crumbly.
Sear in a hot skillet for 6–8 minutes until dark, smoky, and toasty. Finish with fresh lime juice right at the end.
Serve in charred corn tortillas with shredded cheese, cilantro, red onion, and avocado.

Whether you’re fully plant-based or just looking to switch up taco night, this one’s worth trying.

From exploring our processing facility to asking engaging questions about farming, food production, and the future of agriculture, this group reminded us why investing in young leaders matters.

Leadership starts with learning, and we were proud to share a small piece of our story with the people who will help shape the future of our industry. 🙌🏻

Walnut harvest is officially around the corner and it looks like it might be a bit early this year. Mother Nature always throws us curve balls and farmers always seem to adapt.
