Started this morning at 6am on a pork butt in the smoker. This sexy brisket is going on now. Spare ribs, chicken breasts and jalapeño cheddar smoked sausage will be starting around 2 am. All this for a small Wedding reception tomorrow at 10:30. LONG NIGHT.

So yesterday I trimmed my brisket and smoked up those trimmings to make the ultimate cooking aid, Talo. Today I put the brisket on the smoker at 3:30am. After almost 6 hrs it is just about time to wrap in butchers paper til done.

What ya making for 4th of July? I can help you out with baby back ribs. These will come fully cooked and vacuum sealed. All you have to do is heat them up. Use your grill and guests will think you spent all day making some of the best ribs you have ever had. Send me a message and get your orders in. They will be ready to pick up starting on the first of July.

Ok y’all, tomorrow is your last day to put your order in. There has been some confusion for coworkers due to the maintenance shut down Wednesday at work. Hey what’s up everybody. How about we do a rack of Baby Back Ribs next week. Now these aren’t your typical Applebees bones with some meat. These are very thick, smoked to perfection and finished in a way that only I can give you. Hit me up on messenger for all the details.
