Olde Bill's Favorite Green Chili Stew
Serves 8

2 tablespoons vegetable or sunflower oil
3 pounds pork, cut into ¾-inch cubes (your favorite pork such as pork loin pork butt)
1 large onion, chopped (2 cups)
2 medium size potatoes, cut into ¾-inch cubes
2 carrots, sliced
2 (28 ounce) cans Las Palmas® Green Chili Enchilada Sauce (Walmart)
1 (16 ounce) jar (2 cups) 505 Southwestern® Hatch Green Chiles (Walmart)
1 (2.75 ounce) package Westport Spice® Chile Verde Mix (or ½ cup from 22 ounce refill package)

Heat oil in a 6 quart stock pot over medium-high heat. Add cube por, cook just until lightly browned. Add onion, potatoes,and carrots, cook for 2 minutes. Add enchilada sauce, green chiles, and Westport Spice Chile Verde Mix, stir until blended. Bring to a gentle boil, lower heat, simmer for 30 minutes or until vegetable are tender, stirring often to prevent sticking to pot. Serve as is or over hot cooked rice or pasta.

Beef 'N' Bean Chili For Two
Serves 2

1 pound 90% lean ground beef
1 (7.75 ounce) can El Pato® Mexican Tomato Sauce (Walmart)
½ cup water (chicken broth)
1 (15 ounce) can Great Value® Mixed Chili Beans (kidney, pinto, black beans in a chili sauce) (Walmart)
2 tablespoons Westport Spice® Championship Chili Spice Blend, or to taste

Cook ground beef in a 4-quart stock pot over medium-high heat until no pink is visible. Add the remaining ingredients, stir. Bring to a gentle boil, lower heat, and simmer for 5 minutes, stirring occasionally. If desired, serve with salad.

Ralph Carroll’s Favorite Chili
Serves 4

1¼ pounds (20 ounces) 90% lean ground beef
4 tablespoons Olde Westport Championship Chili Spice Blend® (see Olde Bill's Comments for more cooking directions from Ralph Carroll)
2 (16 ounce) cans Bush’s Chili Beans® (mild or hot), undrained
1 (8 ounce) can tomato sauce (1 cup)
1 cup V-8 Vegetable Juice® (regular or spicy-hot)

In a 4 heavy 4 quart saucepan, cook ground beef over medium-high heat until no pink in meat. Remove from heat, stir in Olde Westport Championship Chili Spice Blend®. Return to heat, add chili beans, tomato and V8 juice (I used spicy-hot, excellent choice). Bring to a gentle boil, stirring often. Lower heat, cover, simmer for 15 minutes, stirring occasionally.

Olde Bill’s Comments: Mr Carroll is a 20 year plus user of Olde Westport Championship Chili Spice Blend®. He shared this recipe with me and gave his permission to share with you. He loves his chili with a little more zip than his wife but he always had her taste the chili as he added Olde Westport Championship Chili Spice Blend® to the pot. When she said it was just fine, he stopped. When she left the kitchen, he dumped in an additional 2 tablespoons and he said she never complained. Do you honestly think he was fooling her? I doubt it.
