Creamy Spaghetti Squash with Turkey Breast!!!!!!
2 lbs of cooked and seasoned turkey or chicken breast
1 large spaghetti squash (about 6 cups of squash)
6 oz spinach
about 20 cherry tomatoes sliced in half
1.5 cups of heavy cream
a lot of garlic salt, some red pepper
2/3 cup parmesan cheese
1 onion
4-6 cloves garlic minced
4 Tbsp butter
Cut the spaghetti squash in half. Place halves facedown on a cookie sheet with oil and bake at 350 for an hour.
OPT: Put the cherry tomatoes on a cookie sheet with some oil. Broil in the oven on high until they are browned and slightly shriveled
Melt some butter in a large skillet. Add minced garlic and onion to the pan and cook until slightly soft.
Add the heavy cream and cook until hot and bubbling. Then stir in the parmesan cheese and broiled tomatoes. Add a bunch of garlic salt and some red pepper!
Remove from heat and add the turkey (or chicken) and spinach.
When the spaghetti squash is cool, scrape out the halves with a fork.
Finally stir in the spaghetti squash to the skillet mixture. Stir thoroughly and then reheat until hot and ready to serve!!
Add desired garnish and enjoy!

You’re invited to come and hang out at the farm! Bring the kids, strollers, wagons, and some comfy walking shoes, and go on a relaxing, self-guided farm walk. You’ll be able to observe first hand how and where our animals are raised, and get to see some of them up close!
Then, prepare to indulge in some epic and legendary food, hand prepped by John & Aimee Willis with Handful Bread Co. food truck! Many of the ingredients they use are sourced from our farm and other local farms!

All week we've been keeping an eye on the weather forecast for Saturday. Heavy rain, high winds, and thunderstorms are forecasted to begin late tonight and looks like it will continue throughout the entire day until late Saturday night.
Unfortunately we have decided to CANCEL ALL FARM TOURS scheduled for tomorrow, Saturday, May 21.
We may reschedule in August sometime but we don't have a confirmed date yet - we'll keep you posted if/when we do.
In the meantime, plan to join us for our Farm to Food Truck event on Saturday, June 25! We'd love to see you!

SUNDAY DINNER
Ryan put this PORK BUTT ROAST in the smoker on Saturday night, where it sat for 12 hours on low heat. Sunday afternoon he took it out, wrapped it in a towel to “let it sit” and then it was put back in the smoker to keep warm, along with some of our Bratwursts. The result was the most tender, flavorful pork roast ever!! He also made a homemade rub which he put all over the outside. IT WAS AMAZING!!!!!!! Our nation's modern cattle have been bred to gain weight very rapidly in a feedlot setting. Those genetics make them a very fragile animal. By contrast, our cattle are bred to thrive on forage only without chemical crutches. With those genetics comes resiliancy and a ruggedness that can handle the weather extremes of our midwest climate.

John & Aimee Willis have been an integral part of our small farm business for almost 4 years. Each week they host the Mokena (IL) pick up location, manage our social media, connect with and respond to customer questions, and generally represent us well in the Chicagoland communities.
As the needs and responsibilities of our farm business have grown, we asked John & Aimee if they’d be willing to consider relocating their family here to Indiana to join us in more intentionally fulfilling the mission of our farm. We’re so happy they said yes and are looking forward to an exciting future together!
Aimee will continue in her role (mentioned above) while John (aka Farmer John) will be working alongside Farmer Ryan and learning the day-to-day responsibilities of our farm operation. John’s passion for farming, his love for people, combined with his natural talents of engineering and mechanics, give him the perfect skill set necessary to meet the everyday challenges of farm life. Together they make an excellent team!
The Willis family is currently in the process of looking for a place to live in or near the Goshen area. It's a challenging housing market right now so please let us know if you know of anything that might work for their family of 7 (email [email protected]).
Their move to Indiana means some changes are coming to the Mokena pick up location. We have some great ideas that we’re looking forward to implementing there to serve our Mokena area customers even better! In the meantime, we’ll make sure to keep you in the know as plans develop.
