Take a glimpse into our onsite apiary, with just over 50 hives on site, what does it look like and why do we set it up this way? What looks like a simple wildflower meadow is actually a carefully managed apiary designed to keep colonies healthy, productive, and resilient.

🔨 Hive Stands
Elevating hives off the ground helps reduce moisture issues, discourages pests, and makes inspections and maintenance easier on the beekeeper.

🌪️ Ratchet Straps
Those colorful straps aren't just for looks. They help keep hive components secure during strong winds, storms, and the unpredictable Texas weather that can otherwise scatter equipment across a pasture.

↔️ Hive Spacing
Notice the distance between colonies. Proper spacing helps reduce disease transmission and minimizes "drifting," when bees accidentally enter neighboring hives and spread pests or pathogens. This also allows us to have time and space for neighboring hive pheromones to dissipate off of us before moving to the next colony.

🏠 Three Boxes High
Most hives pictured are currently working on their second box, with growth goals of reaching three boxes. We follow an 80% rule when determining whether to add another box or not:
• Bottom box – the brood chamber where the queen lays eggs and new bees are raised
• Middle box – food storage for the colony's pollen and honey reserves. Each colony needs 30-50 pounds of honey to sustain its self through winter. We do not harvest from these boxes to ensure healthy colonies emerge next spring.
• Top box – "surplus" honey that we harvest, extract, and bottle. Much like wine, each property produces a unique flavor of honey.

🌸 The Real Magic: The Flowers
This field is covered in native wildflowers, providing nectar and pollen from dozens of plant species. A diverse forage source helps support stronger colonies and contributes to the unique flavor profile of local honey.

✨Meet the Texas Longhorn Beetle!

One of the most recognizable beetles in the South, the Texas Longhorn Beetle is famous for its striking markings and exceptionally long antennae. Despite their intimidating appearance and large size, these beetles are completely harmless to people and play an important role in our ecosystems. With over 36,000 species world wide and nearly 400 just in our ecoregion, you've probably seen these pollinators and didn't know it.

🌳 Texas Longhorn Beetles spend most of their lives out of sight. As larvae, they develop inside dead, dying, or decaying wood, where they help break down plant material and recycle nutrients back into the soil. This hidden stage can last months—or even years—before the adult beetle emerges. The larvae are a major food source for Woodpeckers and small mammals.

🌿 Adults are important pollinators as their diet switches to pollen and nectar. Their bold coloration may look like a warning signal, helping deter predators that mistake them for less appetizing insects.

🔄 As decomposers, longhorn beetles are an important part of healthy forests, woodlands, and grasslands. By helping break down dead wood, they contribute to the natural cycle that supports new plant growth and habitat for countless other species.

🌦️ Warm temperatures and abundant woody habitat often lead to increased sightings, making summer the perfect time to watch for these impressive insects.

🌿 Fresh Harvest in the Store Now! 🌿

Straight from the garden and onto the cart! This week's harvest is bursting with flavor, color, and nutrition.

🍃 Fresh Basil, Thyme, and Cilantro
🥬 Swiss Chard

One of the biggest advantages of buying local produce is time—most grocery store produce travels hundreds or even thousands of miles before reaching the shelf. Our produce goes from field to store in a matter of hours, helping preserve flavor, texture, and nutritional value.

🍽️ Need dinner inspiration?

Quick Chard & Parmesan Pasta
✨ Ready in about 20 minutes

🥬 1 bunch Swiss chard, chopped
🍝 8 oz pasta
🧈 2 tbsp butter or olive oil
🧀 ½ cup grated Parmesan
🍋 Lemon zest, salt & pepper, fresh chopped herbs

1️⃣ Cook pasta according to package directions, reserving ½ cup pasta water.
2️⃣ Sauté chopped Swiss chard in butter or olive oil for 3–4 minutes until wilted.
3️⃣ Toss pasta with the chard, adding a splash of reserved pasta water to create a light sauce.
4️⃣ Stir in Parmesan, lemon zest, salt, and pepper. Top with fresh chopped herbs. (Add your protein of choice to make it a complete meal. We recommend chicken or your favorite fish.)

Simple, fresh, and a perfect way to enjoy garden-grown greens!

🦋 Meet the Checkered Border Patch Butterfly!

A close relative of the Monarch, the Checkered Border Patch depends on plants in the Aster family as host plants—including Indian Blanket, sunflowers, daisies, and many other native wildflowers. Their early emergence makes them one of the first butterfly species to become active each summer.

🌻 These butterflies live fast-paced lives. From egg to adult, their entire life cycle spans only about 45 days, allowing for multiple generations throughout a single growing season.

🐛 Unlike many butterfly caterpillars that live and feed alone, Checkered Border Patch caterpillars are highly social. You'll often find groups of them feeding together, sometimes stripping a host plant of its leaves. While this can look dramatic, their broad range of host plants and flexible egg-laying habits mean they rarely cause lasting impacts to flower production in the landscape. Additionally, like the Monarch, they sequester toxics produced by the plants they feed on, making the caterpillars unpalatable for most birds.

🌧️ Their populations are closely tied to rainfall. Wet years often produce an abundance of host plants, leading to population booms and spectacular displays of these beautiful butterflies across fields, prairies, and gardens.

Bright, bold, and endlessly colorful, zinnias are among the hardest-working flowers in the summer garden. These cheerful blooms thrive in the heat, making them a favorite for pollinators and gardeners alike.

🦋 Zinnias are a magnet for wildlife. Butterflies, native bees, hoverflies, and other beneficial insects flock to their nectar-rich blooms throughout the growing season. Their long flowering period provides a reliable food source when many other plants begin to fade in the summer heat.

🌱 Easy to grow from seed, zinnias can go from planting to flowering in as little as two months. Regular harvesting or deadheading encourages the plants to produce even more blooms, often continuing until the first frost. Pro-tip: if you dead head before they're spent, they make a beautiful additional to fresh cut bouquets!

🌈 Available in nearly every color except true blue, zinnias come in a wide range of shapes and sizes—from compact border varieties to towering cut-flower selections that can reach several feet tall. Plant them in a full sun area with good drainage and let nature do the rest.

🌻 Beyond their beauty, zinnias play an important ecological role in pollinator gardens by providing nectar, pollen, and habitat throughout the season. Deer and cattle tend to leave them alone, because of the bitter taste & they make a great w**d suppressor when planted densely!

☀️ Heat-tolerant, drought-resilient once established, and constantly buzzing with life, zinnias are proof that some of the most valuable plants in the garden are also the most beautiful.
