Long before Western Cuts & Market opened its doors, my dad opened the first Mexican carnicería in Grand Junction with one simple goal: provide quality products, treat every customer like family and always take pride in the work behind the counter.
From the very beginning, Chuy has been a part of that journey. With more than 25 years of experience, he’s never stopped caring about the little things, whether it’s selecting the right cuts or grinding beef fresh with the same attention to detail he’s had for decades.
Today, our family’s tradition continues here at Western Cuts & Market. While this is a new chapter for us, the values remain the same: quality, honesty, hard work and genuine care for every customer who walks through our doors.
Every cut of meat, every batch of freshly ground beef, and every product we prepare reflects those values.
