ππ§ Lemon-Garlic Chicken Pitas with Feta Tzatziki & Roasted Bell Peppers
π Ingredients
Lemon-Garlic Chicken
500 g (1 lb) chicken breast or thighs, sliced
3 tbsp olive oil
Zest & juice of 1 lemon
3 cloves garlic, minced
1 tsp dried oregano
Β½ tsp paprika
Salt & black pepper
Roasted Bell Peppers
2 red bell peppers, sliced
1 yellow bell pepper, sliced
1 tbsp olive oil
Pinch of salt
Feta Tzatziki
1 cup Greek yogurt
Β½ cup grated cucumber (squeezed dry)
Β½ cup crumbled feta
1 tbsp olive oil
1 tbsp lemon juice
1 small garlic clove, grated
Salt to taste
For Serving
Warm pita breads
Sliced cucumber, red onion, lettuce (optional)
π©βπ³ Instructions
1οΈβ£ Roast bell peppers
Preheat oven to 220Β°C / 425Β°F.
Toss peppers with olive oil and salt.
Roast 20β25 minutes, until soft and slightly charred.
2οΈβ£ Marinate & cook chicken
Mix olive oil, lemon zest & juice, garlic, oregano, paprika, salt, and pepper.
Toss chicken to coat.
Cook in a hot skillet or grill pan 5β6 minutes per side until golden and juicy.
3οΈβ£ Make feta tzatziki
Stir together yogurt, cucumber, feta, olive oil, lemon juice, garlic, and salt.
Chill until ready to use.
4οΈβ£ Assemble pitas
Warm pita breads.
Fill with chicken, roasted peppers, and fresh veggies.
Drizzle generously with feta tzatziki π
