🌮 Loaded Taco Casserole 🌮

Simple twist on a Taco Tuesday that smells amazing and is guaranteed to be a favorite!

You’ll need:
2 lbs JT2 Ground Beef - www.jt2beef.com/products/ground-beef-box-1
2 bell peppers, sliced
1 yellow onion, sliced
1 poblano pepper, chopped
3 garlic cloves, chopped
1 packet taco seasoning
1 can diced tomatoes + green chilies
1 can black beans
1 cup corn
Tortilla chips (we used rounds)
8 oz shredded Mexican-style cheese
Topping ideas: lettuce, pico de gallo, avocado, cilantro, sour cream, black olives + hot sauce

Directions:
1. Preheat oven to 375°F.
2. Heat oil in a large pan. Add peppers, onion, poblano and garlic. Cook 10–12 minutes, until softened.
3. Add ground beef and taco seasoning. Cook 6–8 minutes, breaking up the beef as it browns.
4. Stir in tomatoes + green chiles, black beans, corn and salt. Cook for 2 minutes, then remove from heat.
5. Lightly grease a 9x13 baking dish. Layer tortilla chips, half the beef mixture and half the cheese. Repeat layers, finishing with cheese.
6. Bake for 16–20 minutes, until cheese is melted and lightly browned. Let cool for 10 minutes, then add your favorite toppings and serve!
