Hi, my name is Corey.
My goal as a farmer is to empower people on Sand Mountain with greater nutritional access in a convenient way.
Sand Mountain Micros LLC is a direct to consumer vertical farm where I grow, harvest and deliver fresh microgreens to the surrounding community.
So let’s break it down.
There are a couple of issues local to us that my farm seeks to solve. First and foremost, it’s about connecting people to a local source.
What does that mean?
Much of our produce comes to us on the back of refrigerated trucks from across the country. The greens you buy at your local grocery store are generally grown from one of three places: California, Canada or Mexico.
My farm is different because we serve customers within a 25 mile radius.
That means longer shelf life, better nutritional value, and a pride in knowing that you supported a small business in your community.
My favorite part about this work is the moment I get to hand something I’ve grown to a neighbor. There’s nothing like helping someone feel good about what they are eating for dinner. You don’t find relationships like this in the back of a refrigerated truck.
The second problem I seek to solve is a nutritional deficit.
What does that mean?
It is my belief that regardless of where you live, you deserve access to quality food.
In our rural setting, it’s sometimes hard to find good, quality nutrition without having to drive to get it. I once heard from a customer that they regularly drive more than 20 miles to access a a greater selection of farm fresh goods.
That’s why I started growing and delivering microgreens to people on and around the Mountain.
My farm works to helps connect rural folks to nutrition by delivering it straight to their door on demand.
Why microgreens in particular?
Well, they are a superfood that can be conveniently added to wraps, salads, soups, sandwiches or as a side to any meal. They taste great and pack a nutritional punch.
You can learn how some of my previous clients have used their microgreens in our Facebook group called Sand Mountain Micros Community. I’ll leave a link to that group at the end of this post where you can go and look at some of their plate pictures.
My clients have been getting access to quality nutrition because the microgreens they are eating are up to 40x more nutrient dense than their mature plant counterparts.
Sound like a crazy claim? Well, it’s not!
1 oz of broccoli microgreens contains 10x the ingredients used for sulforaphane production than a mature broccoli head. Sulforaphane is a chemical that neutralizes toxins, decreases inflammation, protects DNA and slows tumor growth.
Other microgreens I grow include pea shoots and sunflowers. Not only do these two contain huge amounts of vitamins, minerals and antioxidants but sunflowers in particular contain folate, the necessary chemical to form B vitamins which support reproductive health.
I also grow a highly rare superfood that many on the mountain may like to try: Red Garnet Amaranth.
Not only will this plant in small quantities make your plate look absolutely beautiful with its deep red color, but it is rated as one of the most nutrient dense microgreens with the highest concentrations of ascorbic acids (vitamin C), carotenoids (antioxidants), phylloquinone (vitamin K), and tocopherols (vitamin E). Make your next plate picture look beautiful and get a huge dose of micronutrients with its earthy flavor.
A favorite that many of my clients ask me to grow for them regularly is Spicy Salad mix. It contains five types of microgreens (including a rare, German turnip called Kohlrabi) that is sure to give you a huge boost of micronutrients to your next meal.
What I am bringing to this Mountain is not another pill promising some amazing outcome for your health.
This is food. It’s proven by multiple studies to be nutritious for you, and it means taking better care of yourself.
If you don’t believe me, just look up microgreens on Google Scholar and you will find loads of papers from scientists doing nutritional studies on these plants.
