Savor is bringing a new kind of butter alternative into U.S. bakeries, using technology designed to create fat without relying on cows or traditional agriculture.
The California-based company, backed by Bill Gates’ Breakthrough Energy Ventures, developed a product made by synthesizing fat molecules from carbon dioxide and hydrogen. The result is designed to function similarly to traditional butter while avoiding the need for livestock or agricultural land.
Instead of going through a traditional FDA premarket approval process, Savor has used the self-affirmed GRAS pathway, under which qualified experts can determine that an ingredient is generally recognized as safe.
The product is already being used by some bakeries and restaurants, including One65 and Jane the Bakery. Supporters see the technology as a potential way to reduce the environmental resources associated with conventional dairy, while critics are questioning the safety, transparency and broader implications of creating food through industrial processes.
