Just thought I'd give a little update.

I sold out of rabbits before I could get a processing class together. We don't have enough grow outs for a whole class. I still have 4 or 5 6-8 week old rabbits if anyone needs a TAMUK.

We are making our first trip to Texas next week with the livestock. If you want a rabbit, let me know. ♥️

In the meantime, I'm already studying what forages I'll find in East Texas! I've connected with other farmers and rabbitries in the area and can't wait to meet all of you!

One of the things I love processing our meat here at home is that I can tell a lot about the health of our herd just by looking at their insides.

This buckling was processed the other day so that we had one less mouth to bring with us on our trek to Texas. I was not about to spend money getting paperwork on an animal that was intended for food. So, he got processed earlier than expected. I came home from work late Wednesday night and got to work.
He was full of fat, had a deep red liver, and had no liver cysts of any kind. The kidneys were well rounded and smooth and had no stones (something that can be a problem with male goats on alfalfa). And there were no visible parasites in his stomach or intestine.

This buckling was born here, raised here, and eaten here. Our oldest delivered him herself in the early spring.

He was brined for 12 hours in the fridge. I applied a dry rub (secret recipe).
Smoked for 5 hours between 220 and 250 degrees
Basted repeatedly with my own mixture of Sailor Jerry's, apple juice, and maple syrup.

He was absolutely divine.

I've been putting this off for a couple of weeks. I'm sorry that we've been absent, but it's with good reason.

We have decided that we are moving out of state and will begin settling into the Palestine/Athens area of Texas in August. The farm will be for sale and we are moving onto bigger things.

We have made many friendships and hope that you will continue to follow our journey. If not, that's OK too.

I have about 60 grow outs that need to be done. So, we are still planning a processing class before we leave. Some of the kits could be sold as breeders if you need some rabbits, but all of my proven stock is sold or spoken for already. We are selling the duck flock, also. We are pretty much selling everything. If you need something, let me know. We might have it. ♥️♥️

There's nothing like being able to make your own medicine.
Everyone who has used my sore body balm or comfrey salve is always begging for more!
Behind the ability to make these is hours of research and study. What each herb is capable of, the temperature range needed to extract the medicine, peak medicinal harvesting, and when that herb is in season are all things that come into play when I'm making these balms.

I really do appreciate all of the messages and testimonials that I get in my inbox, and I love that you all love it as much as we do!

Left is Comfrey, Right is Sore Body Balm. Notice the color difference between the two. The redness in the sore body balm is from the St. John's Wort being extracted and infused into the base. These are always made in ultra small batches to ensure quality. 😊

Believe it or not, the best time to harvest St. John's Wort is just before the buds open. You know that it is prime harvest when you squish a bud between your fingers, and it stains red! The red color is hypericin, which has many medicinal values; but, I'm making Sore Body Balm with our harvests.

Little fun fact:

All the cookware I own is vintage cast iron, stoneware, or stainless (for boiling water). A well seasoned skillet is just as non-stick as any non-stick pan; just without the chemicals.
There are some tricks to helping create that non-stick surface:
Season it well.
Pre heat your pan.
Don't flip, stir, or disturb the food until it's no longer raw on the bottom side.
Use oils or fats. I prefer lard, butter, or avocado oil.
Use heat to dry your skillet after washing.
Always hang it up when it's not in use. This will prevent moisture build-up.

I've been rehabbing rusty skillets for years. Both of these skillets were bought covered in rust and are now my favorite skillets. They've cooked over the fire, in the oven, and on my stove. They will last for generations if taken care of properly.
