What makes our Grenache Rosé different from our Grenache Red? The Grenache grapes we use for rosé will be picked earlier than the portion we use for the red wine. It then gets pressed and only gets a couple of hours where the skins of the grape are in contact with the juice. This keeps the color light and the tannins low. We then ferment the juice at cool temperatures in a stainless steel tank. This keeps it crisp and refreshing with bright acidity. After that it is only aged a few months before we bottle it. This keeps it fresh and fruity. Contrasting that, The Grenache we use for the red is picked when the grapes are a bit riper than those we use for the rosé. Then it is fermented as whole berries, skins and all, This lets the juice/wine pickup color and tannins. After fermenting we press it and barrel age it for about a year before we bottle it. Two very different wines made from the same grapes.

Why are so many whites and rosés fermented and aged in stainless steel tanks? Stainless steel doesn't impart flavors or aromas which keeps the wine very clean and fruit forward. Tanks also minimize the oxygen exposure which helps keep the wine fresh and crisp tasting. Tanks are also able to control the temperature of the wine/juice so we are able to both ferment and age the wine at nice cool temperatures which again helps keep things fresh and crisp tasting. On another note stainless steel tanks are so practical. They are are versatile, easy to clean, and they are where so much of the winemaking is done. Stainless Steel is a great choice for fermenting and aging whites and rosé.
