In 1989 the focus on our cattle turned toward producing top quality seed stock. We started our foundation herd with Polled Hereford cattle. For the next 20 years, we purchased and bred cattle utilizing superior genetic selection to produce balanced, functional cattle that have exceptional productivity and carcass quality. During this time our family became increasingly aware of problems and incons
istencies in the quality and safety of commercially produced beef. We went back to what used to be a common practice on every family farm. We started raising our cattle for our own consumption. Our family really enjoyed the beef we produced. It was tender, flavorful, and more importantly we knew what it had been fed and the condition in which it was raised. Not long after sharing our beef with other friends and family we soon began getting orders to supply beef to others. We employ strict guidelines for all of our cattle, how they are raised for beef as well as how they are handled and processed at slaughter. Now more than ever, in our society there is a dramatic increase in concerns over where and how our food is produced. As a result the market for our beef has grown substantially. We do purchase a number of cattle from a select group of breeders as well as beef that is raised, produced and meets the same standards of requirements we employ on our own cattle. Because we limit our resources to maintain quality and manageability, we may be unable to supply all of the beef orders as they come in. A waiting period does arise from time to time. Traditionally our beef cattle have been grain fed. Over the last few years due to the increasing knowledge of the health benefits and customer request, our operation has evolved into a grass based system. We believe in the natural process and production of grass fed beef. It takes several months longer to grow out a grass fed beef though we believe the benefits are well worth the wait. There are those who order our beef who prefer traditional grain fed cattle. Strict guide lines for feed ingredients and animal management are required and followed for any cattle or beef product we raise or purchase from an outside source. Growth hormones and antibiotics in the feed are never permitted. Our customers have the ability to custom order a beef prepared specifically for them or the ability to purchase only select cuts of steak or hamburger. Our beef is processed in a state inspected facility giving us the ability to do custom orders and beef orders that meet the requirements for the commercial retail and whole sale market. Q. What type of cattle do you use for your beef? Hereford, Angus or a cross of the two. What do they weigh at time of slaughter? A. 1000 to 1200 pounds on average
Q. What is the carcass weight? A. 600 pounds on average. Do you age your beef before its cut? Yes, we dry age up to 21 days. Can I get a beef cut up the way I want? Yes, in most cases it can be. How is the beef packaged? It is all vacuum pack in most cases. DO you ever buy cattle or beef for resale? Yes, only from select producers or suppliers. Do you ever ship beef by mail? No, as a measure of quality control will not mail beef orders. Do you keep beef year round? Yes, we try to keep steak and burger all the time. However, custom orders tend to be seasonal. Fresh, USDA choice and select beef can be gotten weekly with advance notice. How do you sell the beef? By the pound or by carcass weight for custom orders. can a beef be purchased and taken home? No, we will only sell an animal for beef if it goes to an approved processing plant. Do you offer anything besides beef? Yes, we offer hogs, by half or whole. We also have bacon, sausage, pork chops and hams, smoked or not. Can beef or pork be ordered that’s unfrozen?
