Every year we pick a few crops to trial in the “fun field.” These Belgian Endive started off in the ground back in June and after a lengthy process that involves harvesting the roots in the fall and then regrowing (forcing) them inside in the middle of winter, we finally dropped these beauties off at last weekend. We can’t wait to see what they do with them! This was the first trial run of forcing and with any luck we’ll have more this spring as we start to come out of hibernation. I don’t know if the numbers make sense but it sure is nice to have something crisp and fresh from the farm in February.
