Fresh asparagus season is here. This quick spring stir-fry is a delicious way to enjoy it. Pair fresh, locally grown seasonal produce with a few flavorful staples from the Farm Store, like local honey, veggies and ginger, for an easy weeknight dinner that's full of bright spring flavor and supports our regional farmers and food system!
"Spring Arrival" Asparagus & Bok Choy Stir-Fry
A quick, vibrant spring dinner that brings together crisp asparagus, tender baby bok choy, and a lightly sweet soy-ginger glaze.
Ingredients
1 bunch asparagus, woody ends removed and cut into 2-inch pieces (Available Now at Liberty Prairie Farm Store!)
4 - 6 baby bok choy, sliced lengthwise (Available Now at Liberty Prairie Farm Store!)
1 lb flank steak, thinly sliced OR 1 block firm tofu, cubed
2 tablespoons soy sauce
1 teaspoon fresh ginger, grated (Frozen available Now at Liberty Prairie Farm Store!)
1 tablespoon local honey or maple syrup (Available Now at Liberty Prairie Farm Store!)
1 tablespoon cooking oil
cooked rice (optional)
Instructions
Heat a large skillet or wok over high heat. Add oil and sautΓ© the flank steak or tofu until cooked through and lightly browned. Remove from pan and set aside.
Add asparagus and baby bok choy to the hot pan. Stir-fry for 3 to 4 minutes, just until bright green and crisp-tender.
In a small bowl whisk together soy sauce, ginger, and honey (or maple syrup).
Return the protein to the pan and pour in the sauce.
Toss everything together for about 30 seconds, just until glazed and heated through.
Serve over rice or on its own for a fresh, flavorful, local spring meal!
Note: We had a small typo in the newsletter regarding tofu at the store. While we don't currently offer tofu, we do offer many veggies to add to this dish! :)
