We are a local family farm that raises beef, pork, chicken and lamb. Our beef is grass-fed and grain-finished with no antibiotics ever given. The grain is locally grown and sourced from our neighboring Amish community.

What’s for dinner? Elk Meatloaf on the smoker and sautéed zucchini and squash. Sooo good.

Fossil Farms - Farm Raised Game & All Natural Meats

Recipe:
2 lbs ground elk meat (or any lean, ground meat of your choosing)
1 cup dry bread crumbs (I prefer seasoned, but unseasoned is fine too)
1 cup of your favorite BBQ sauce
2 tbsp parmesan cheese
1 egg
1 tbsp Worcestershire sauce
1 tsp minced garlic
2 tbsp of dried parsley
1 tbsp onion powder
1 tsp each dried basil, dried oregano, salt, pepper
1 tsp crushed red pepper

Mix all ingredients but don’t over mix

Glaze: (after I mixed glaze, I poured 1/2 in bottom of pan and then the rest on top of meat)
1/3 cup ketchup
1/3 cup brown sugar plus a little more to my liking
1/4 cup apple c***r vinegar

Smoked at 350 for an hour and let sit for 5 mins before slicing
