Over the last four years, my family and I have navigated a journey of significant challenges and triumphs. There was a period where the weight of those trials caused my passion for BBQ to wane, leading me to question the future of this dream.

However, the birth of my son in December 2023 and the birth of my daughter in 2025 reignited that spark with more intensity than ever before. While our official sights are set on a 2027 grand opening, I am launching this GoFundMe to bridge the final gap and ensure we meet that milestone with excellence. As a token of my gratitude, every donor will be invited to an exclusive soft-opening event to experience firsthand the craft they helped bring to life

Three years ago, my family suffered a devastating loss with the passing of our baby boy Atlas. After that, I lost my passion and drive to continue building up a food trailer to start Hip Hip Jose's BBQ, so I sold it. Over the past few years, we have been blessed with our son Odin and our daughter Evalyn. The happiness and joy they give me has reignited the passion I once had. With that being said, I have bought a camper that a good friend and I will be renovating into a food trailer. I will be posting updates of the renovation as we go along. Stay tuned.

October is Pregnancy and Infant Loss Awareness Month. As all of you already about the loss of our son Atlas in July 2022 at the 35 week mark. We will be selling shirts and hoodies with our new logo and a Pregnancy and Infant Loss Awareness Month ribbon. A portion of all sales will be donated to Share of Northeast Wisconsin, the Green Bay Chapter of the Share Pregnancy & Infant Loss Support Group.
