It's important to have a consistent crop of fast growing vegetables ranging from 20-40 days from seed to maturity such as radish, turnips, lettuce and arugula as an example to maximize your garden to its full seasonal potential. Polyculture gardens are another helpful form of garden that keeps giving by growing fast growing, medium growth and long period growth crops all in one bed. What would a Polyculture garden look like?

-Root Crops for a base carrot, radish, turnips, parsnips.
-Mid Crops beans, brassica, peas, kale, lettuce, arugula
-Top Crops tomato, pepper, eggplant, corn, flowers

Polyculture Gardens extend the growing season, soil nutrient, erosion and drought tolerance, biomass, pest control and the attraction of pollinators. It's a sustainable solution for small growing space as well as a great method of container garden.

It's squash season everyother day we are harvesting squash such as zucchini andpatty pans. Other harvests include kale, parsnips, mustard, radish, turnips and arugula. Waiting for mother nature to bless us with rain and stable temperatures to boost the tomatoes and peppers.

Early morning garden visits are always a adventure you just never know what you will find in the polyculture bed. Check the size of these out! Are those turnips? Actually no they are purple top daikon radishes. The tops are also edible packed with vitamin C. "If they are that size are they woody"? Most of the time we try to harvest at the correct point in the growth period, but if you are afraid of a radish or any root crop being woody you can peel the outer layer off or cook it down. We grow a wide variety of radish because they are quick and tolerant and customers love them for salads, sandwiches or just a quick snack during a busy day.

Market day, up at 4 am home by 7 am washed and in the cooler by 815 am. I can honestly say today will be the first time ill have beets, turnip, mustard arugula and in the ground spinach at a market sense I started growing vegetables in 2016 in the Dells. As I search for a more permanent home for Future Fresh Urban Ill be doing limited markets this year think of it as a "prove yourself year". As the journey continues, working towards the goal of bringing fresh food to the community year round. Educating through workshops and round tables with the areas top gardeners, chef's and educators. Bringing the agricultural feel to an urban setting by renovating the local food system, cutting down on food waste and transforming it in to "black gold" to re-use it in our beds. Bringing Aquaponics and Hydroponics to be able to grow year round with an open door policy so anyone can see where the food they enjoy is grown, how and who grows it.

Going to the garden this morning I had little confidence with that stomach tangle due to marble sized hail and 2 inches plus of rain in a hour last night. As a grower storms like this can break you in a matter of a second. Crop damage is almost guaranteed, new seeds and seedlings can drown and wash away it all can become very expensive and disappointing. Just driving out to the garden it didn't look promising.. upon arrival my stomach sank water everywhere my first steps in my muck boots it was instant suction could barely walk hands on my hips evaluating the situation I realized I hilled almost everything, added drainage I let a big sigh out and said to myself not today mother nature not today. Everything seemed to grow 2-4 inches over night the peas and cucumbers were over the first couple trellis lines, tomatoes were bright green, the radish leaves were bigger than I remember and the green beans were almost above my knee tucked away safe among the overgrowth. We did have a few casualties with the mustard and arugula but not a loss. The lettuce was enjoyed by the four legged deer thats tracks look like it has 3 "toes" on one of the front legs. Overall I was impressed!

As Future Fresh Urban continues to search for a more permanent home we have been leasing land outside of town. The land used to be a old airport transforming over the years in to a private "community garden". As our plots are surrounded by excellent growers, environmental horticultural groups to even some reps from the Packer culinary department it feels like a friendly competition is present. The land is a mix of clay and sandy loam with a 8 inch layer of local compost over the top. The ground overall is great for growing specially crops such as tomatoes, cucumbers, and peppers. Just like any garden the critters and larger four legged (we wont say the name) tend to enjoy themselves regularly, like the two younger bucks I saw this morning on a neighbor's doorstep eatting the flowers right out of the window planters.

Some photos from around the garden, the bed that looks like a disaster is actually the polyculture bed but really it has 15 different crops growing in it currently all different sizes, and harvest seasons. Each crop has something unique to bring to the bed that benefits another crop if is shade, natural trellis, moisture and building the soil. What's in the bed? radish, carrot, turnup, mustard, bean, pea, squash, kale, spinach, artichoke, Italian dandelion, dill, oregano and onion.

Many schools offer agriculture classes at the high school level, but what about the younger students? Public school curriculum is very limited to nature and agriculture. The students might get a week worth of lessons on plants and nutrition. At Future Fresh Urban we are working on creating a curriculum that engages youth, families, schools and communities through gardening and nature. This program will develop a strong appreciation for the environment and cultivates the mind. By engaging children in hands-on interactive activities through group and individual learning experiences.

---------What will the program look like?
-Gardening hands-on activities
-Where food comes from
-What should I eat?
-Learning about the different food groups, where the food you eat lines up in your overall health and nutrition.
-Food Exposure fresh samples from the garden and other local farms. Foods that the student might not normally try at home.
-Food exposure recipe demos from local chiefs
-Class exercise where the students can get their minds working and body's moving.

---------How long will the program be?
The program will be designed to cover a 8-week span. Throughout the summer recess.

---------Who will teach the program?
Volunteers, Master gardeners, Farmers, Farm staff and educational professionals

This program is being designed to promote healthy eating, understanding the importance of the environment, food and agriculture. The declined interest in agriculture in today's world will only get worse if we don't start bringing the idea back to light and it starts at the roots of today's society.

Building a future through fresh local food in an urban setting.
It's important to educate individuals in where food comes from, why it's important to buy local, and the effects it has on the environment, the body, and the overall future of agriculture. 20 to 30 million people in this country has a food allergy which makes it difficult to trust supermarkets, and restaurants especially when it comes to preservatives and cross contamination. Building a local location where you can trust that is open to the public year-round for fresh nutritional food with the knowledge of who, and where the food comes from. NE Wisconsin sources 83% of the food offered is not locally sourced that includes schools. The food that the upcoming generations are eating everyday majority has lost its nutritional value by the time it hits the trays.

Food is the foundation, but it's really about life. A local food system is the only way to guarantee that you're eating food with its full potential of nutritional value. - Will Allen

"Cheap food is an illusion. There is no such thing as cheap food, the real cost of the food is paid somewhere, and if it isn't paid at the cash register it's paid or charged to the environment, charged to the public purse in the form of subsidies and it's charged to your health. You do get what you pay for, with food and with everything else."- Michael Pollan
