Seven Springs Organic Farm and Cafe We are an organic farm and cafe nestled in the Appalachian Mountains, located in Green Mountain, North Carolina.

Our cafe is open Saturday and Sunday from 8am- 4pm. Feel free to come grab a cappuccino or smoothie and visit with the animals!

Many times we feel like stress is directly related to a trauma, a specific event, work, or a toxic relationship. In this modern world with technology and crazy schedules, chronic stress can sneak up on us and wreak havoc on our mind, body and soul.

Stress Awareness and Adaptogens discusses the physiological mechanism of the stress response in the body. This class will examine external vs. internal stressors, and the different types of stressors, such as psychological, chemical, nutritional, physical and environmental triggers. You will learn all about the stress response, the importance of maintaining healthy cortisol levels, how essential cortisol is for survival and how to maintain balance in the body.

This course will give you the knowledge on how to balance the body through adaptogenic herbs and mushrooms, proper nutrition and lifestyle tips. You will understand the importance of nourishing your gut microbiome to reduce stress. You will also understand how homeostasis and healthy cortisol levels means more energy during the day, better sleep at night, stronger immunity, improved focus, stable mood, healthier skin, hormonal balance and libido. You will also learn about some important relaxing nervine herbs to support enhanced balance in the body.

This ever important course is taught by none other than Seven Springs Organic Farm and Cafe founder and owner, Shanais Pelka who is also the Head of Research and Development for Organifi and the founder of Seven Springs Organic Farm. She is a nutritionist, self-taught herbalist, health educator and mother of three. Shanais has been formulating herbal/superfood products for twenty years, and has formulated award-winning products that have landed on the shelves of mass retail accounts. She specializes in functional mushrooms, adaptogens, superfoods and other medicinal herbs. Shanais has also conducted R&D work and brought products to the market for Califia Farms, Wunderground Coffee and Real Mushrooms. She has a Master of Science in Nutrition and Herbology, a Master of Science in Education and an MBA.

She is currently building a regenerative farm and cafe with her daughters in Green Mountain, North Carolina. She is passionate about food, herbs, medicinal mushrooms, sustainability and community. When Shanais isn't on the farm or working, you can find her hiking with the dogs, hanging with her kids, cooking, fermenting, or spending time in the community.

Ancestral Chef Gabriell has a passion for soil health and human health. One of her favorite things to do is gather friends around a table and nourish them with food grown from the land around them.

Gabriell sources every ingredient with the highest integrity.
She focuses on pastured meats, grass- fed, raw dairy products, organic no-till produce, permaculture farms, and nourishing pastured fats such as ghee and lard. She does her best to source most, if not all of the fixin's within 50 miles.

Keeping our worms toasty for the winter!

We dug a hole in the greenhouse, lined it with a tarp and poked small holes for the liquid to drain out, then covered the worms with cardboard. This keeps it breathable, yet nice and warm. The worms can retreat to the bottom of the hole for heat, then come to the surface for food!

Tallow is the oil rendered down from the fat of ruminent animals such as cattle and sheep. The grass- fed beef kidney suet is finely chopped and placed in a crockpot and cooked on low for 3 to 7 hours. The result is a moisturizing and hydrating oil full of vitamins A, D, E and K.

Stephanie identified nearly every plant on the forest floor, taught us about the healing properties of these plants, then allowed us to make our very own tinctures with our favorite herbs. So excited for the next time you teach here on our farm! ๐ŸŒฟ
