Hanging weight—what does that mean?

Steers taken to be butchered are primarily sold in one of two ways: “on the hoof” or “on the hook.”

“On the hoof” means that the animal is sold for a price per pound of its live weight, before it is processed.

“On the hook,” also known as hanging weight, is how we sell our beef. This means that the beef is being sold based on its weight after the butcher has already processed the animal and the beef has been somewhat trimmed. What’s left “on the hook” is meat and some bones. This weight is typically 60-65% of its live weight; so although “on the hook” prices appear higher per pound, that’s because you are paying for significantly fewer pounds of “waste.”

We’re BQA certified… what does that mean for you?

The Beef Quality Assurance (BQA) program is designed to ensure animal welfare and consumer safety. The program outlines ideal animal handling, management, and treatment techniques. Specifically, BQA has strict animal record keeping and vaccine/medicine administration standards to ensure that animals and consumers alike are never put at risk due to improper treatment.

Per BQA standards, our animals receive nearly all vaccines and/or treatments subcutaneously, or just under their skin, in order to prevent blemishes in any of our beef. We keep years worth of detailed records for each of our animals so that there is never a question as to which animals were treated for what.

BQA is just another step we’ve taken to provide you with the best product possible!

Who Are We?

Our family bought our first 4 beef cows in 2008, and since then we’ve been learning and growing. We have always focused on our breeding herd of Angus, Hereford, and Angus/Hereford cross brood cows and have had babies every spring that we’ve sold at weaning. Over the last several years we have begun raising several of our steers to butcher for ourselves and family. We’ve had such success that this year we decided to dive in even further and raise a larger group of steers to share with you all!

All of our steers are BQA certified and antibiotic free. We raise all of our beef on predominantly grass and forage and give some grain in their last several months to improve marbling and meat quality.

We are selling front quarters for $2.50/lb hanging weight + butcher fees and rear quarters for $2.75/lb + butcher fees. Our first steers should be ready for butcher around June 15th.

What's the difference between a front and rear quarter?

Front and rear quarters differ in which whole-muscle cuts they contain. The front quarter's claim-to-fame is the brisket, while the rear quarter is known for its abundance of steaks (why it is priced slightly higher). You can choose to have your quarter butchered exactly how you would like, so the exact cuts in each differ with preference, but these are the common cuts in each quarter:

Front Quarter: brisket, chuck steaks, pot roasts, rib steaks, short ribs, soup bones, ground beef

Rear Quarter: t-bones, top sirloins, tender loins, flank steaks, sirloin tip, rump roast, top round, bottom round, ground beef
