With fall right around the corner, I’m trying to find some suggestions on a cover crop for the garden. I’ve never done one before so I’m looking for something that won’t take a lot of effort in the spring with the clean up/prep for planting. I’m hoping to replenish nutrients and try to repress some future weeds. Let’s hear what ya got!

We’ve been practicing preserving this season. So far we’ve made various types of refrigerator pickles and beans, traditional hot packed and pressured canned green beans and, of course, freezing our first batch of sweet corn. We’ll have a lot more preserving this week with the second harvest of corn and more beans!

We ended up with 165 ears of peaches and cream sweet corn! These days make the work all worth it! Here’s what we did:

☑️Shucked and cleaned the corn
☑️Blanched the corn for 8-9 minutes
☑️Ice bath to match the time it was blanched
☑️Flash frozen the bare corn several hours
☑️Sealed about 4-5 ears of corn per bag

We read that the flash freeze supposedly helps the corn last longer in the bag. We tried to bag it shortly after the ice bath but there was too much moisture to get a proper seal on the bag with our minimal settings vacuum sealer.

We would love to hear how you save your corn harvest! We like vacuum sealing, but we feel like we could have streamlined production a little more.
