Easy Hamburger Potato Casserole
1 lb ground beef
4 medium potatoes, peeled and thinly sliced (about 1/8-inch thick)
1 medium onion, chopped
1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
1 cup sour cream
1 1/2 cups shredded cheddar cheese (divided)
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
2 tbsp olive oil or butter
1/2 cup milk (if needed for thinning the soup)
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
Cook the Ground Beef:
In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat.
Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through (about 6-7 minutes).
Drain any excess fat from the beef, then add the chopped onion, garlic powder, onion powder, salt, and pepper. Cook for an additional 2-3 minutes until the onion becomes soft.
Prepare the Sauce:
In a separate bowl, combine the cream of mushroom soup, sour cream, and 1/2 cup of milk (if the mixture seems too thick). Stir well to combine.
Add about 1 cup of the shredded cheddar cheese to the mixture and stir until melted and smooth.
Layer the Casserole:
In the greased 9×13-inch baking dish, layer half of the sliced potatoes on the bottom.
Spread half of the cooked ground beef mixture over the potatoes.
Pour half of the creamy soup mixture over the beef.
Repeat with the remaining potatoes, ground beef mixture, and soup mixture.
Bake:
Cover the casserole with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender.
Remove the foil and sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve:
Allow the casserole to cool for a few minutes before serving. Serve hot with a side salad or vegetables.
Tips
Add Veggies:
You can add frozen peas, corn, or green beans for extra flavor and texture.
Swap the Soup:
If you don’t have cream of mushroom soup, you can substitute with cream of chicken or cream of celery soup.
Make it Spicy:
For a little kick, add some diced green chilies or jalapeños to the beef mixture.
Double it:
This recipe can easily be doubled if you’re feeding a larger crowd or want leftovers
