Ever since I shared my bloodwork from the past two years on the blog, people have been asking me what I eat.

This is a pretty typical keto dinner for me.

Grassfed steak.
Local salad greens.
Grassfed raw cheese.

That is most of it.

I do not try to make it complicated. I focus on animal protein, healthy fat, low-carb vegetables, and food that comes from farms I know.

For me, the biggest change was getting away from ultra-processed food, seed oils, and the idea that every meal needs to be built around starch or sugar.

This kind of meal gives me protein, fat, minerals, and fiber without a big carb load.

I know everyone has to make their own decisions about food. But if you are curious, I wrote more about my bloodwork, what changed, and what I’ve been eating on the blog.

This is one of our new calves from this spring’s calving season.

We have about 20 on the ground so far, with many more expected over the next week.

During calving season, we keep the herd moving through smaller paddocks and fresh pasture. That helps keep the cows and calves on clean ground and lets the herd behave more naturally.

This is what healthy pasture is for.

Healthy moms. Healthy calves. Healthy Soil.

A new UCSF study got my attention because it raised a serious question:

Are the B12 levels we call “normal” really enough as we get older?

The study looked at healthy older adults and found that lower active B12 levels, even within the normal range, were associated with slower cognitive and visual processing and more white matter changes in the brain.

That matters to me.

My own B12 was 322 pg/mL in 2025. That was lower than I wanted.

My most recent result was 574 pg/mL.

I did not take B12 supplements.

The main thing I changed was food.

I cut out seed oils and ultra-processed food. I moved toward low carb. I started eating more grass-fed beef, beef liver, eggs, chicken, and real animal fats.

I am not saying this proves anything for everyone. I am not saying beef prevents cognitive decline.

But I know what changed in my own life.

My B12 improved without supplements, and that has made me even more convinced that nutrient-dense animal foods deserve a serious place in this conversation.

B12 is found naturally in animal foods. Beef is a practical source. Liver is one of the richest natural sources.

Some people need supplements, and that is between them and their doctor. But I think food should be the first place we look.

I wrote more about the UCSF study, my own bloodwork, and why I believe grass-fed beef and liver are worth considering if you are trying to improve nutrition naturally.

We had a family over last night kind of suddenly, and dinner ended up being very simple.

I pulled chicken breasts and New York strips from the freezer, thawed them in the sink, and put them on the grill.

That was it.

No complicated recipe. No special planning. Just good meat, a hot grill, and enough food for everyone.

That is one of the reasons I like keeping food like this on hand. Life does not always give you much notice. Sometimes people stop by, plans change, or dinner just needs to be easy.

Our chicken breasts are still on sale this week, and we are fully restocked on chicken, including whole chickens and drumsticks.

If you need simple food ready for real life, this is a good week to stock up.

That track matters.

It shows where the chickens were yesterday, and where they are not today.

Every day, our birds move forward to fresh pasture. They do not stay on the same ground while manure builds up around them. The birds get fresh grass, clean air, sunlight, and new ground. The pasture behind them gets time to recover.

That is a big part of what pasture-raised chicken should mean.

We have all been instructed to be afraid of raw chicken. Wash your hands. Disinfect the counter. Keep it away from everything else. Cook it thoroughly.

Those are still good practices. We take food safety seriously.

But I think the questions should start earlier.

Why have we accepted a food system where the customer has to treat the food like a threat by the time it reaches the kitchen?

How were the birds raised? Did they have fresh ground? Were they able to move away from yesterday’s waste? Was the system built around healthier living conditions from the beginning?

That is why we move our chicken houses.

Health should start with the way the animal lives.

Good food begins with a place

Central Indiana is a good place to raise grassfed beef when the land is managed well.

This spring has been a clear reminder why. Cool temperatures, enough rain, and longer days have helped push the pasture forward. That matters because grassfed beef starts with forage.
