Traffic Alert!

Broadway Street is CLOSED between Boyd Avenue and Park Boulevard. This is South of McKenzie Road near the Greenfield-Central High School. Crews are hopeful Broadway will be reopen on Thursday.

You can use McKenzie Road or Seventh Street to get around the closure. Please drive with caution around this area.

Forget what you remember about pork chops.

For years, many of us were taught to cook pork until it was completely done. The result was often dry, tough meat that nobody was excited about.

Today's recommendation from the USDA is 145°F with a rest period.

Here's exactly how I grill our boneless pork chops:

• Season with salt and pepper.
• Preheat your grill to medium-high heat (about 400°F).
• Grill 4-5 minutes per side, depending on thickness.
• Check with an instant-read thermometer.
• Pull the chops when the center reaches 145°F.
• Place them on a plate and loosely tent with foil.
• Let them rest for 5-10 minutes before serving.

That rest matters. The temperature will even out, the juices will redistribute, and the chop will stay juicy.

A properly cooked pork chop can change your mind about pork chops.
