Lord have mercy, I’ve been so busy trial-watching I neglected to post a menu this morning!

This week, I’ve got two familiar favorites and a brand NEW chicken spaghetti recipe, and it’s my favorite one EVER!

I’d seen the recipe in several cookbooks and food blogs, and the inclusion of diced tomatoes & green chilis (Rotel) intrigued me. We tried it at our house last week, and it was amazing! My husband has already asked me to make it again!

The Rotel gives it great flavor (not spice) and the small amount of cream cheese in the sauce makes the texture so rich and decadent. You’ll want this one again and again! Order now while supplies last for pick-up or delivery on Monday!

What is goulash exactly? This isn’t a dish I’d heard of growing up, but once my New England-raised father-in-law prepared this for the family one evening, it immediately became an addition in my repertoire!

Goulash is a dish prepared on the stove that contains macaroni noodles, ground beef, diced tomatoes, and cheese. But what really elevates it from a basic beefy mac is the homemade tomato sauce and unique blend of savory spices.

P.S. If you’ve never tried the King Ranch Chicken, you must give it a whirl. I made one for my family last week, and I must confess I even ate the leftovers for breakfast one morning! 🤫🤫🤫

🍴Ordering is open NOW through Sunday for next week’s meals! 🍴

As we enter the new year, I will be scaling back production a bit. This job is such a blessing for my family as it allows flexibility for me to be available when needed at home while also doing something I love.

The Casserole Lady has grown by leaps and bounds, and I am so incredibly grateful! However, to ensure I can still be as present at home and with my children to the degree I believe God calls of me in this season of life, casseroles each week will be offered in fairly limited quantities.

SO…please do place those orders as early as possible to ensure you receive all your Casserole Lady favorites each week!
