This is far past due, but we wanted to take a moment to thank everybody who came in during Taco Week and voted for us. We were truly humbled by the support and had an absolute blast making “The Coal Miner.”
Immediately after the contest ended, we headed to Chicago for a huge food show to source new ideas and menu items to bring back to you all. Unfortunately, while we were there, my hernia really started acting up, so we didn’t get to spend as much time at the show as we would’ve liked.
That said, we still found a few things we’re excited to test out soon, and we’ll definitely need your feedback when the time comes.
Now for what everybody really wants to know: yes… The Coal Miner tacos will officially be making their way onto our full-time menu.
During Taco Week, I was getting in as early as 3:00 in the morning to start braising brisket, and while it was worth it, that process just isn’t sustainable long-term. The full braise also took up most of our oven space, which made it difficult to keep up with desserts and other menu items.
To bring them back full-time, we’ve been working behind the scenes to rethink the process a bit. Right now, we’re experimenting with a half-smoked, half-braised brisket to keep the flavor we loved while making the process more manageable for the kitchen.
We just wanted to say thank you again for all the support and excitement around The Coal Miner tacos. Seeing the response from the community meant a lot to us, and we’re super excited to bring them back very soon.
