Another great cut for mom.

One of my best friends is having a birthday today and I asked her what her favorite cut of beef was. She asked me, "Favorite cut or favorite muscle?"
Then she reminded me how juicy and tasty the spinalis was... Yum!
Whenever I split a ribeye with a friend, I always cut it at a funny diagonal to be sure that both of us get equal shares of the spinalis. I also request the steaks with the larger cap when I'm given a choice.

One beef carcass may spend part of its life at as many as 4 different farms or beef operations in its journey to your plate. Different farms (for some reason, we call them operations) specialize in different parts of the industry depending on weather and resources.

Definitely a household favorite! Easy to cook and no leftovers! Makes everyone happy!

Each beef carcass only has two flank steaks. They are lean and full of flavor, and make a great cut for high heat cooking.
