Friends! I won 2nd place! With the ingredients I was given, I am very happy to have come up with such a tasty cocktail and placed 2nd. 🤓 My cocktail for the 2025 O'Riley's Irish Pub Downtown Cocktail Competition. I present - Cocktail Reggiano
My Ingredients to compete with: Casa Amigos Reposado & Parmesan Cheese
Cocktail:
- 1oz Casa Amigos Reposado
- 1oz Parmesan Cheese Fat-washed Esprit de Krewe Cane Vodka (details below)
- 1oz Basil Simple (details below)
- 1oz Fresh Squeezed Lemon Juice
- 1/8th ounce savory tomato water (details below)
Top:
- Savory Tomato Water Foam (details below)
- Fresh Grate of Black Pepper
- a light grating of Parmesan Cheese
- Season Parmesan Cheese Crouton
- Chive
Esprit de Krewe Parmesan Cheese Fat Wash:
- 12 hour sous vide of a blend of 4 Parmigiano Reggiano (grated) and a handful of Parmigiano cheese rinds at 115 degrees. Strained and filtered through cheese cloth and coffee filters.
Basil Simple Syrup:
- a 1.5/1 (sweet/water) with 1 cup of fresh basil leaves for every cup of sweet. Muddled in a pot with the sugar. Then add water. Heat to dissolve sugar. Finally steeped for about 30-45 minutes.
Savory Tomato Water (Foam):
- blended vinegar ripened tomatoes, basil, thyme, lemon zest, garlic, shallots, salt, and a touch of sugar. Strained all the water off the solids. Added gelatin and foamed it with a whipped cream siphon.
