🥓 LET’S TALK NITRITES & NITRATES… 🥓
We get a lot of questions about nitrites and nitrates in bacon, ham, and other cured meats. And honestly, there’s A LOT of confusing marketing surrounding them.
So, let’s clear a few things up!
First and foremost, nitrite plays an important role in making cured meats safely and consistently.
When we use nitrite in products like bacon and ham, it helps:
🥓 Protect food safety — Nitrite helps inhibit the growth of *Clostridium botulinum*, the bacteria responsible for botulism.
🥓 Create that familiar cured color — It helps give bacon and ham the pink/red color you expect instead of the gray/tan color of regular cooked pork.
🥓 Develop cured flavor — That distinct bacon and ham flavor isn't just smoke and salt. Nitrite is part of what creates the flavor we associate with properly cured meat.
🥓 Protect quality & shelf life — It helps slow oxidation and rancidity, keeping the product tasting better longer.
Now for the part that gets interesting…
🌱 What about “natural” nitrites?
You'll see products marketed as “uncured,” “naturally cured,” or “no nitrites added.”
Many of those products STILL contain nitrite.
Instead of adding a precisely measured curing ingredient containing sodium nitrite, they may use something like cultured celery powder or celery juice powder where they literally dump nitrites on the plants and deem them a "natural" source.
And here's the important part:
👉 Once nitrite is present in the meat, the nitrite ion is the same chemical species whether it came from celery or a conventional curing ingredient.
The pig doesn't know the difference.
The bacon doesn't know the difference.
And your body doesn't magically identify one as “natural” and the other as “man-made.”
The source is different. The relevant chemistry is the same.
Think about salt. 🧂
Salt can come from evaporated seawater or be mined from underground. Either way, sodium chloride is sodium chloride.
We choose to use properly formulated curing ingredients because they allow us to be precise, consistent, and intentional about exactly how much we're using.
And that's important: more nitrite is NOT better. Proper curing is about using controlled amounts as part of an overall food-safety process that also includes sanitation, temperature control, proper cooking, refrigeration, and good manufacturing practices.
