๐ฅ Protein Zucchini Brownies- this is my own recipe that I continue to perfect , please continue to modify and change things to make it more individualized based on your wants.
1 cup of apple sauce (can use butter 1:1 as a substitute )
1/2 cup of raw , natural honey
1/2 cup brown sugar, lightly packed
2 teaspoons vanilla
3/4 cup shredded zucchini, drained
1 1/2 cups all purpose flour
1/2 cup of protein powder (I used Octonuts almond protein powder)
1/2 cup unsweetened cocoa powder (I use Dutch processed)
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Optional Add-In (choose additional mix ins for more flavor and/or texture)
1 cup semi-sweet chocolate chips
1 cup of dried cranberries
1 cup of coconut flakes
1 cup of walnuts
Preheat the oven to 375F.
In a stand mixer, or in a bowl with an electric mixer, combine the melted butter, honey, brown sugar, and vanilla until smooth.
Stir in the shredded zucchini. Set aside.
In medium bowl, whisk together the flour, cocoa powder, salt, protein powder ,baking powder, and baking soda.
Add this mixture to the butter mixture, and mix with the cookie paddles (or an electric hand mixer) until everything is well combined.
Stir in the optional add-ins.
Batter will be thick- spread into 8x8 baking pan- It wonโt spread very much in the oven.
Bake for 40 mins.
*If batter is too thick add in 1/4c of water at a time until consistency is looser.
* The type of protein powder will effect the consistency of the brownies
