🔥 Pork Tenderloin on the Grill — Big Flavor, Smaller Price Tag
Pork tenderloin is one of Chef Paul’s favorite summer grillers. But here’s a tip: skip the pre-seasoned ones at the grocery store. They cost more per pound and usually come with a high‑sodium price. Doing it yourself is cheaper, cleaner, and honestly tastes better.

The night before (or at least a few hours ahead), rub 1–2 tsp of Caribbean Spice all over the tenderloin. Wrap it in plastic wrap and refrigerate. When it’s time to grill, heat things up and let the tenderloin cook gently — it shines when not overcooked (about 140°F). After grilling, tent with aluminum foil and let it rest 5 - 10 minutes on the cutting board so the juices stay where they belong.
