My first event I made 30 doughs, had a line of people at the farmers market, was sooooo nervous I could hardly sleep. Made 25 pizzas and felt pretty overwhelmed. The support was awesome and people waited a while for a pizza. We were cooking in one little oven at that time.
Fast forward to my last few events, we made 55-70 pizzas in a couple of hours for over 100 people. It’s honestly mind boggling how much I grew, how much Mimi’s grew and what I created with the help and love from so many people.
I hope this story and business I created inspired some of you to chase dreams. I quite literally created something from nothing. I had one oven, on a dirty porch and the next thing you know I’m turning a horse trailer into a successful catering businesses people want at their weddings.
It’s incredible. I feel very sad and weird but u also feel incredibly proud of what I have done. I learned how to tow a trailer, plumbing, I laid out my design, I learned about electrical work, propane, how to crank up a trailer, dump and fill water, use spreadsheets in excel? What? It’s WAY more than just showing up and making pizza. It’s an entire universe that I was in for years.
I’ll be calculating things the next couple of weeks and figuring out how to price my sweet baby trailer for sale. If you or someone you know wants to make pizzas for a living, start a catering company, or heck maybe it becomes a mobile sandwich shop. I have no idea!
