Crispy Roasted Sweet Potatoes (So Easy!)

Ingredients:
• Sweet potatoes, halved
• Kosher salt
• Olive oil (optional, but helps crisp them up)

Instructions:
1. Preheat oven to 400°F.
2. On a baking sheet, sprinkle a generous pinch of kosher salt and a drizzle of olive oil (if using).
3. Place the sweet potatoes cut-side down directly onto the salt and oil. This helps them caramelize and roast like squash.
4. Roast for about 30 minutes, or until the cut side is golden and the flesh is tender.
