Braised Beef Short Ribs!!!

Recipes that are in my head...

After awhile, you just don't look at the cookbook or bookmarked website anymore. This recipe is one of those.

Wine and beef broth with a mirepoix, mushroom, tomato paste make up the braising liquid. Brown the short ribs first then we add the liquid. 375⁰ oven temp, which is a bit warmer than I prefer but I had limited time, for 2 hours. I think a lower temp is better but you need to get food on the plate.

Strain the braising liquid and cook down for a au jus. Put on a bed of mashed potatoes and you have a legendary meal.

I must be having fun at home... Beef Enchiladas!!

I have a ton of cookbooks and I like to grab them from time to time for inspiration. This one's about 25 years old.

A rather simple but flavorful rendition of beef Enchiladas. I used some dried Guajillo and Ancho peppers for the sauce. Yes, Rump steak was used (I never knew that was really a cut).

I didn't make the tortillas from scratch as I ran out of time.

I cooked the cubed steak, about a 1 1/2 # worth, in a crockpot overnight in beef broth. Beef was super tender. Shred that up and put it in a saucepan that has cooked onion, garlic, the paste made out of the peppers, cumin and other seasonings to taste. Cook for a bit to meld all the flavors.

Fill the tortillas up, roll them, put sour cream and cheese on top. Broiler for 5 minutes. Eat up!!!

Don't Cry... Shredded Pork Hocks with Rice and Beans!!

An old standby recipe... Basically in a large Dutch oven, add a few tbsps each of oil and butter, add a mirepoix (carrots/celery/onions). Sauté for about 10 minutes and the veggies are soft and starting to brown. Throw in some garlic, cook another 1 minute. Now, add your hocks, 4 cups of broth. Get to a simmer, put the pot, covered in a 350⁰ oven for 2 - 2 ½ hours. Once the meat is tender, remove from pot and set aside. Strain the broth in the pot. Add back into the pot, add about 3-4 C of cooked rice, a can each of pinto and red kidney beans. Cook for a bit to reduce the liquid and incorporate it into the rice and bean mixture. Once you get the consistency you want, shred the cooked meat and add into the pot. Season to your liking. Serve!

Sha La La La My Lady!! Spicy Pork Stew with Linguica and Chick Peas.

Chilly night calls for a hot and hearty dish!

I found this recipe on the Internet and made it my own. I really should call this stew, Three Paprika Stew with Pork. Sweet, hot and smoked!!! oh yeah!!

A wonderful recipe to make when you are in the house and can simmer this for hours on the stove top.

One of new favorite stews to make and happy I could improvise without killing the dish.
