Blueberry Cream Cheese Coffee Cake
I've baked this twice this month, and both times the last slice was gone before breakfast.

Ingredients
1 1/4 cup blueberries
1 egg + 1 egg yolk
1 egg white
1/2 tsp baking powder
For the cake:
1 3/4 cups all-purpose flour
1/2 cup sugar
1/2 cup cold butter, cubed
1 tsp vanilla extract
1 pinch salt
For the cream cheese filling:
16 oz cream cheese, softened
1/2 cup sugar
1 tbsp cornstarch
1 tsp vanilla extract
1 tsp lemon juice
For the crumb topping:
1/2 cup all-purpose flour
1/4 cup sugar
3 tbsp cold butter

Directions
1. Heat the oven to 350°F and grease a 9-inch springform pan.
2. Mix the flour, sugar, baking powder and salt, then rub in the cold butter until crumbly. Add the egg, egg yolk and vanilla and knead briefly into a soft dough.
3. Press the dough over the bottom and about 1 1/2 inches up the sides of the pan.
4. Beat the cream cheese, sugar and cornstarch until smooth, then beat in the egg white, vanilla and lemon juice. Spread it over the dough and scatter the blueberries on top.
5. Rub the flour, sugar and cold butter together with your fingers into small clumps and sprinkle them over the berries.
6. Bake for 55 to 65 minutes, until the crumb is golden and the center only jiggles slightly.
7. Cool in the pan for 1 hour, then chill for at least 2 hours before slicing.

Ingredients
2 cups yellow sweet onions, thinly sliced
2 tablespoons butter
1 (15 ounce) can chicken broth
1/4 teaspoon salt
1/4 teaspoon fresh pepper, ground
2 chicken bouillon cubes
For the cheese sauce:

3 tablespoons all-purpose flour
1 1/2 cups whole milk
1/8 teaspoon salt
2 slices American cheese
For the topping:
1 cup shredded Swiss cheese
1 tablespoon chopped fresh parsley

Directions
1. Melt 2 tablespoons butter in a 2 quart saucepan over medium-low heat. Add the onions and cook 15 to 20 minutes, stirring now and then, until soft and translucent.
2. Add the chicken broth, bouillon cubes, salt and pepper. Simmer gently for 30 minutes.
3. Meanwhile, melt 3 tablespoons butter in a second pan, whisk in the flour and cook for 1 minute. Pour in the milk slowly while whisking and cook about 5 minutes until thick and smooth.
4. Stir the salt and American cheese into the sauce until melted.
5. Pour the cheese sauce into the onion soup and simmer 10 minutes more, stirring, until creamy.

Mexican Pizza
8 tortillas, 4 stacks and 8-10 minutes in the oven is all this one asks of you.

Ingredients
1 lb lean ground beef
1 packet taco seasoning
Vegetable oil, as needed
8 taco size flour tortillas
1 (15 oz) can refried beans
1 (10 oz) can red enchilada sauce
2 cups shredded Mexican cheese blend
For the topping:
Tomatoes, diced
Green onion, sliced

Directions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. Brown the ground beef in a large skillet over medium-high heat, breaking it up. Drain the grease, then add the taco seasoning and 1 cup of water.
3. Bring to a boil, then lower the heat and simmer until the liquid has mostly cooked off.
4. Heat about 2 tablespoons of oil in a clean skillet over medium heat. Fry the tortillas one at a time, flipping often, until crispy, 3-4 minutes, adding oil as needed.
5. Warm the refried beans so they spread easily. Spread them on 4 tortillas and top with the beef.
6. Cover with the remaining tortillas, spread about 2 tablespoons of enchilada sauce on each and sprinkle with 1/2 cup cheese.
7. Bake on the prepared sheet until the cheese is melted, 8-10 minutes. Top with tomatoes and green onions.

Brussels Sprouts in Garlic Butter
The trick is patience: cut side down, lid on, and no stirring for 10 to 15 minutes.

Ingredients
15 Brussels sprouts, halved lengthwise
1 1/2 tablespoons butter
1 1/2 tablespoons olive oil
3 cloves garlic, smashed with the flat of a knife
freshly grated parmesan cheese (optional)
salt and pepper

Directions
1. Melt the butter with the olive oil in a medium skillet over medium-high heat until the butter is foamy.
2. Turn the heat down to medium, add the smashed garlic and cook until lightly browned.
3. Lift out the garlic and discard it.
4. Add the sprouts cut side down, cover, and cook on medium-low heat for 10 to 15 minutes without stirring, so the cut sides stay on the pan and brown. They are done when a knife slides in easily.
5. Top with freshly grated parmesan and season with salt and pepper to taste.

Strawberry Cinnamon Rolls
The last time I made these, the pan was empty before the glaze had set.

Ingredients
¾ cup milk
⅓ cup margarine or butter, softened
3¼ cups all-purpose flour
1 (.25 ounce) package instant yeast (2 tsp)
¼ cup white sugar
½ tsp salt
1 egg
¼ cup water
Filling:
1 cup strawberry jam, give or take
½ teaspoon cinnamon
2 cups sliced strawberries
Icing:
1 cup powdered sugar
¼ tsp cinnamon
1-2 tbsp milk

Directions
1. Warm the milk in a small saucepan and stir in the butter until melted. Let it cool to lukewarm.
2. In a large bowl, mix 2¼ cups of the flour with the yeast, sugar and salt. Stir in the egg and ¼ cup water, then the milk mixture until a dough forms.
3. Stir in the remaining cup of flour, turn the dough onto a lightly floured surface and knead until smooth. Return it to the bowl, cover with a damp towel and let it rest 10 minutes.
4. Roll the dough into a 15×10 inch rectangle and spread the jam all over it. Sprinkle with cinnamon and cover evenly with the strawberries.
5. Roll it up, pinch the seam to seal and cut into 12 equal rolls. Set them cut side up in a greased 11×13 baking dish, cover and let rise until doubled, about 30 minutes, while the oven preheats to 375°F.
6. Bake for 30 minutes, until golden brown.
7. Stir the powdered sugar and cinnamon with 1 tbsp milk, adding up to one more tablespoon until it drizzles. Drizzle the glaze over the finished rolls.
