Out ancestors started cooking with fire over 2 million years ago. They probably came across a Mammoth on fire next to a tree that was struck by lightning; or some other animals roasting in a wildfire. Either way the attraction to the smell of meat cooked over open flame has never left our DNA. That’s why I like to get up early in the morning–something I am loath to do for any other reason–light a fire in my smoker and cook meat. The aroma of roasting meat makes strangers into friends. Neighbors walking by ask will ask what you’re cooking and will invite themselves over. Something they will typically not do if you are doing anything else. Come on over! Meals are social events, meant to be shared and enjoyed together. I want to share mine with you.
