Proverbs 27:25–27
"The hay appeareth, and the tender grass sheweth itself, and herbs of the mountains are gathered. The lambs are for thy clothing, and the goats are the price of the field. And thou shalt have goats' milk enough for thy food, for the food of thy household, and for the maintenance for thy maidens."
Notice "goats milk" and "herbs of the mountains mentioned here." God shares His wisdom in His Word.
Goat milk has long been valued as a nourishing food, and for good reason. It is easier to digest than cow milk due to its smaller fat globules and softer curd formation. Many people with mild sensitivities to cow milk find goat milk easier to tolerate because it contains predominantly A2 beta-casein and lower levels of the more allergenic alpha-S1 casein.
Rich in calcium, potassium, vitamin A, and magnesium, goat milk is also naturally abundant in prebiotics that support gut and immune health. With slightly less lactose than cow milk and a nutrient profile that closely resembles human breast milk, it is a wholesome option for both children and adults.
For thousands of years, goat’s milk has been used as an alternative when breast milk was not available. In ancient cultures, it was often valued for its relative ease of digestion, and infants were sometimes fed from goats directly or through simple vessels. Modern science validates this practice.
I think we can say the herbs of the mountains have proven themselves. There should be a way of life for every man and woman, especially for those of us who live in places like Harlan County. We have such a variety of plant life here in the Central Appalachians that we should put as much of it to use as we can.
