3 ripe Kent mangos, peeled and diced
1/2 red bell pepper, finely diced
1/4 red onion, finely diced
1 jalapeรฑo, seeded and finely diced (leave some seeds if you want extra heat)
1/4 cup fresh cilantro, chopped
Juice of 1 lime
1 tablespoon honey (optional, if mangos are not super sweet)
Pinch of sea salt

Dice the mangos into small chunks.
Add diced red pepper, red onion, jalapeรฑo, and cilantro to a bowl.
Squeeze fresh lime juice over everything.
Add a pinch of salt and honey if desired.
Gently stir together and refrigerate for 20 minutes to let the flavors meld.
Serve with tortilla chips, grilled chicken, fish tacos, or eat fresh by the spoonful.
