So today is a bittersweet day for me. Today I started disassembling the maple Evaporator.

I purchased this Evaporator from a neighbor that decided to retire about a decade ago when he was around my current age

I've been using this equipment every year except 2020 when I had a heart attack.

As I was disassembling the chimney I was thinking about how many cords of firewood I cut over the past decade. I'm guessing that I used around 20 full cords of wood for the past decade.

I'm guessing that I made over 500 gallons of syrup in that Evaporator over the years.

From the outside of the sugar shack I no longer see the 10" stove pipe sticking out of the roof. Tomorrow I will remove the flashing and repair the hole in the roof

On the other hand I know the new owner, the Arrigan family, is getting excited to learn how to make maple syrup and will carry on this American tradition.

We started preparing for the upcoming maple season today.

Ryan and Pat worked in the major setion of the gully checking lines and making minor repairs. They installed around 100 taps before realizing that they didn't bring enough taps with them.

I worked the other side of the gully installing taps then went to the apple orchard hedgerow. I found a fair amount of squirrel nibbles that didn't pe*****te the hoses. I also installed a little over 100 taps.

We're about 60% completed and will revisit the lines this coming weekend. Plans are to finish up within a few days

We're helping West Windsor Farms get an early start on the upcoming maple season

Tomorrow we will walk the lines to inspect them for damage. We'll also start putting the taps on the existing drop lines. It's a lot easier doing this work when it's still above freezing and no snow on the ground

Maple season is only a few weeks away

I am pleased to announce that West Windsor Farms is taking over making maple syrup when I retire in a few weeks.

The new owners will be using the same trees that I have used for the past decade as the source of the sap.

I will be working with them in all phases of maple syrup production. The maple syrup they produce will taste similar to what I produced.
They will also be deciding what additional products to carry that I carry.

We are in the process of transferring all the equipment and getting ready for the upcoming maple season.

I will be participating at the WINDSOR NY FARMERS MARKET this coming Saturday from 9-11 am. This is my last time until possibly December

Please plan accordingly and consider stocking up before I retire.

As I've decided to retire from my maple syrup business I'm selling most of my equipment. I've made a listing of everything I have for sale. I've categorized everything by the activity it's related to. Categories include tapping, collection, boiling, reverse osmosis, filtering, bottling, marketing, advertising, and a miscellaneous category.

I've been hesitant to make this post.

I've been making maple syrup for over 40 years. This coming spring I am planning on having replacement knee surgery. I'm not sure when it will be scheduled.

I will not be making syrup in 2025. I'm considering retiring from retail as well. I have a few more farmers markets and events planned over the next few months.

We will have items available for Christmas presents this year. My inventory is getting low and once it's gone I probably won't be restocking.

I'll keep you posted as to when and where I'll be for the next few months
