There is something special about the smell of a hoppy fermenting beer.

White Labs: Kolsch Yeast

Notes: Waimea hop is a newly bred variety with some amazing sounding flavor characteristics:

"Meet Waimea, New Zealand’s jack-of-all-trades. It wasn’t always this way—Waimea was bred for its bittering potential, not exceptional flavor and aroma. Yet this high-alpha hop is full of pleasant surprises, bursting with intense fresh tangelo, citrus fruit and pine needle character."

This with a gentle touch of Cascade's notorious grapefruit character and Columbus' big dank, heavy hop hit should put an absolute TON of flavor in a tiny 4.3% ABV package.

I also have changed to using this Kolsch strain with my hoppy beers as the clean Kolsch-Like character allows the hops to shine. Raise a glass to Oglesby Ale...coming soon, to Blue Meadows Farm.

Well, it has been a hiatus beyond what I hoped for but its time to get back in the saddle. It looks as though Saturday, April 11th will be the first brew day in a while! Its time to brew Oglesby Ale which will be a Session IPA. Lets get this thing rolling.

The brewing schedule has been seriously weak in 2014. Looking for a home and other things have put brew days on the back burner. That said, I've starting writing some new lager recipes for the summer and the first one that I've come up with is a rye lager named "The Lager in the Rye."
