Lebanese moussaka. Ground meat, onions, garlic, the herbs you like (I do oregano, basil, or winter savory), and salt and pepper. Saute it all up in a bit of olive oil or broth. Then add a few tomatoes, chunked up, and an eggplant, chunked up. Put a lid on it turn it down to a low simmer and let it all stew together for a bit. (I usually cook half hour to 45 min). Then serve it up. Delicious, fast, and easy. If you want to veganize it use mushrooms and/ or lentils or beans instead of the meat.
