To make a delicious biltong soup, you’ll need:

Ingredients:

• 250g biltong, chopped
• 1 onion, chopped
• 2 carrots, diced
• 2 celery stalks, diced
• 2 potatoes, diced
• 4 cups beef or vegetable broth
• 1 cup milk or cream
• 2 tablespoons butter or oil
• Salt and pepper to taste
• Fresh parsley or cilantro for garnish (optional)

Instructions:

1. In a large pot, heat the butter or oil over medium heat. Add the chopped onion and cook until soft and translucent.
2. Add the diced carrots and celery to the pot and cook for a few minutes until they start to soften.
3. Stir in the diced potatoes and chopped biltong, and cook for another couple of minutes.
4. Pour in the beef or vegetable broth, and bring the soup to a simmer. Let it cook for about 20-25 minutes or until the vegetables are tender.
5. Once the vegetables are cooked, stir in the milk or cream. Season with salt and pepper to taste.
6. Allow the soup to simmer for another 5 minutes to let the flavors meld together.
7. Serve hot, garnished with fresh parsley or cilantro if desired.
