This is the real thing — graded A5, the highest grade Japan gives. Look at that marbling. It's not fat, it's flavor, and it melts at body temperature.

How to cook it: hot cast iron, no oil (it makes its own), 60–90 seconds a side, salt only. Slice thin. Don't you dare put steak sauce on it.

A little goes a long way — this is a two-ounce-per-person steak, not a 16-ounce steak.
