The dark package isnā€™t spoiled. Itā€™s actually what beef often looks like when oxygen is removed during vacuum packaging.

That bright red color everyone looks for? Thatā€™s oxygen reacting with the meat.

Open the dark package and give it a few minutes, youā€™ll usually watch it turn red right before your eyes.
